Ingredients
  

  • 4 diced chicken thighs
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 diced sweet potato
  • 500 g green beans
  • 1 jar green curry paste
  • 1 can coconut cream
  • 1 tbsp fish sauce
  • Juice of a lime
  • 1 bunch coriander

Method
 

  1. Heat some olive oil in a hot pan and add your seasoned chicken (a little salt and pepper works wonders!).
  2. Toss in the garlic, ginger, and curry paste, and cook for about 5 minutes to really bring out those flavors.
  3. Pour in the coconut cream, and add the beans and sweet potato. Cover with a lid and let it simmer on medium heat until the potato is tender, roughly 10 minutes.
  4. Stir in the fish sauce, lime juice, and fresh coriander for that final touch of yum!
  5. Serve it up with rice or noodles, or enjoy it as a hearty chunky soup!
