Ingredients
  

  • 1 cup shredded roast chicken
  • 1/2 cup raw coleslaw or grated vegetables such as carrots and cabbage
  • 1 cup frozen or tinned corn
  • 1/4 cup diced pickled jalapeños optional
  • 1/4 cup sour cream
  • 1 cup shredded cheese
  • 15 small tortillas
  • Olive oil cooking spray
  • Salsa for serving

Method
 

  1. In a large mixing bowl, combine the shredded roast chicken, raw coleslaw or grated vegetables, corn, diced pickled jalapeños (if using), sour cream, and shredded cheese.
  2. Mix well until all ingredients are evenly distributed.
  3. Place a small amount of the filling mixture onto a tortilla and roll up tightly.
  4. Repeat with the remaining tortillas and filling mixture.
  5. Preheat the air fryer to 200°C.
  6. Spray the taquitos with olive oil cooking spray, making sure to coat them evenly.
  7. Place the taquitos in the air fryer basket, making sure they are not touching each other.
  8. Air fry the taquitos for 6 minutes, turning them halfway through the cooking time.
  9. Once the taquitos are golden brown and crispy, remove them from the air fryer and let them cool for a few minutes.
  10. Serve the taquitos with salsa for dipping.
