Ingredients
  

**Ingredients:**
  • 1 kg lamb mince
  • 2 large carrots diced
  • 2 sticks of celery diced
  • 2 large onions diced
  • 4 cups frozen mixed vegetables
  • 2 tbsp crushed garlic
  • 2 tbsp beef stock powder
  • 2 tbsp plain flour
  • 1/2 cup tomato paste
  • 1/2 cup Worcestershire sauce
  • 3 cups water
**For the topping:**
  • 1 kg carrots
  • 1 kg potatoes
  • 2 cups Greek yogurt
  • 2 cups grated pizza cheese

Method
 

  1. Preheat your oven to 180°C (356°F).
  2. In a hot pan, brown the lamb mince. Then add the diced carrots, celery, and onions, cooking until they start to soften.
  3. Stir in the frozen mixed vegetables, crushed garlic, beef stock powder, plain flour, tomato paste, and Worcestershire sauce. Cook for a few minutes.
  4. Add the water and let the mixture simmer for 10 minutes.
  5. Meanwhile, boil the carrots and potatoes until soft. Mash them together and mix in the Greek yogurt, salt, and pepper.
  6. In a large baking dish (or two smaller ones), spread the meat and vegetable mixture. Top with the carrot and potato mash, and sprinkle over the grated cheeses.
  7. Bake in the oven for 25 minutes or until the top is beautifully golden brown.
  8. This recipe serves 8, but you can easily halve it for a smaller serving. Enjoy this delicious and veggie-packed cottage pie with your loved ones! 😋
