Ingredients
  

  • 1 kg chicken thighs
  • 1 can coconut cream
  • 1 tbsp crushed garlic
  • 1 tbsp crushed ginger
  • 1 cup peanut butter
  • 1/4 cup sweet soy sauce
  • Juice of a lime

Method
 

  1. Preheat your oven to 200C. Grab a baking dish and arrange your chicken thighs in a single layer.
  2. In a bowl, whisk together the coconut cream, crushed garlic, ginger, peanut butter, sweet soy sauce, and lime juice. This is where the magic happens!
  3. Pour this luscious mixture over the chicken. Make sure every piece is lovingly coated.
  4. 4. Pop the dish into the oven and bake for 40 minutes. Your kitchen is going to smell amazing!
  5. Serve it up with some fluffy rice and green Asian veggies for a complete meal.
