Roasted Carrots with Maple and Miso

Ingredients
  

  • 500 g baby carrots cut lengthways into quarters
  • 1 tbsp miso paste
  • 2 tbsp maple syrup
  • 1 tsp crushed ginger
  • 2 tbsp olive oil
  • 1 tsp salt
  • Pinch of pepper

Method
 

  1. In a bowl, whisk together all the ingredients except the carrots.
  2. Toss your carrots in the miso mix, making sure they’re coated evenly.
  3. Spread them out on a baking tray—don’t overcrowd!
  4. Roast at 180°C for 30 minutes or until golden brown.
  5. Serve them up and watch them disappear!
