Ingredients
  

  • 8 fat sausages 🌭
  • 1 diced onion 🧅
  • 1 diced capsicum 🌶️
  • 1 tbsp crushed garlic 🧄
  • 1 tbsp crushed ginger 🍠
  • 2 tbsp curry powder 🍛
  • 2 tbsp tomato paste 🍅
  • A dash of salt and pepper 🧂
  • 1 cup long grain rice 🍚
  • 1 can 400ml coconut cream 🥥
  • 1 can 400ml water 💧
  • 2 cups of veggies choose your faves! 🥦🥕
  • 300 g spinach leaves 🍃

Method
 

  1. Snip those sausages with kitchen scissors straight into the pan, and brown them to perfection.
  2. Add in the onion, capsicum, garlic, ginger, tomato paste, and curry powder. Stir everything together and let those spices work their magic for a few minutes.
  3. Next, pop in the rice, spinach, coconut cream, and water. Season with a dash of salt and pepper, give it a good stir, cover, and let it simmer on low. In about 20 minutes, you'll have a deliciously creamy and hearty meal ready to dig into!
