  If you love Mexican flavours and cheesy goodness, this Mexican lasagna is going to be your new favourite dinner! It’s packed with all the good stuff—beef, beans, capsicum, corn, and loads of melty cheese—all layered between soft tortillas. It’s like tacos and lasagna had a delicious baby! Perfect for feeding the family on a budget, and it’s even better the next day (if there’s any left!). Let’s get cooking!

Ingredients
  

  • 500 g beef mince
  • 2 onions diced
  • 2 capsicums diced
  • 2 cups frozen or canned corn
  • 2 x 400g cans kidney beans
  • 2 x 400g cans crushed tomatoes
  • 1 packet taco seasoning or use the spices below
  • 2 tbsp smoked paprika
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Chilli powder to taste
  • 10 small tortillas
  • 1 x 300g jar of salsa
  • 500 g Mexican grated cheese

Method
 

  1. Heat a pan and brown the mince.
  2. Add the onion, capsicum, and spices. Cook for a few minutes until the onion softens.
  3. Stir in the corn, beans, and tomatoes.
  4. Once it starts to bubble, cover and cook on low for 15 minutes. Remove the lid and cook for another 5 minutes to thicken.
  5. In a lasagna dish, spread a thin layer of the beef mixture, top with two tortillas, then more beef and some cheese. Repeat for three layers, finishing with tortillas.
  6. Pour the salsa over the top and spread evenly.
  7. Sprinkle on the remaining cheese.
  8. Bake at 180°C for 30 minutes until golden. Let it rest for 10 minutes before serving. I love adding a big dollop of sour cream on top! Enjoy! 🤤
