Hey everyone! 🎉 It's Day 4 of my 10 Days of Quick Easy Tray Bakes series, and today I'm bringing you a taste of the Mediterranean with this delicious Sausage Bake! 😋

Ingredients
  

  • 400 g crushed tomatoes 🍅
  • 1 tbsp crushed garlic 🧄
  • 1 tbsp beef stock powder 🥣
  • 2 tsp dried or fresh thyme 🌿
  • 1 diced red onion 🧅
  • 1 diced capsicum 🫑
  • Salt and pepper 🧂
  • 6 thick beef sausages 🌭
  • Olive oil 💧
  • 1 bunch basil 🍃

Method
 

  1. Preheat your oven to 200°C.
  2. In a baking tray, mix together the crushed tomatoes, garlic, beef stock powder, and thyme.
  3. Scatter the diced red onion and capsicum over the tomato mixture.
  4. Arrange the sausages on top and drizzle a little olive oil over them.
  5. Bake in the oven for 10 minutes, then take the tray out and turn the sausages.
  6. Put the tray back in the oven and bake for another 15 minutes.
  7. Remove the sausages, add in the roughly chopped basil leaves, and give everything a good stir.
  8. Serve and enjoy with your choice of rice, potatoes, or crusty bread! 🍚🥔🍞
