- Grab a big mixing bowl and toss in the chickpeas, cherry tomatoes, red onion, cucumber, parsley, and feta.
- In a jar or small bowl, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, salt, and pepper. Shake it up until it’s silky smooth!
- Pour the dressing over your salad and toss gently to coat everything in that zesty goodness.
- Pop it in the fridge for an hour or two to let those flavours mingle. (But honestly, it’s delicious straight away too!)
- Serve it chilled, and enjoy!
