  Who doesn’t love a salad that ticks all the boxes? This make-ahead Mediterranean salad is fresh, filling, and oh-so-easy to whip up. Packed with wholesome ingredients and drizzled with a zesty homemade dressing, it’s perfect for meal prep, picnics, or a simple weekday lunch. Ingredients
  

  • 2 cans chickpeas drained and rinsed
  • 1 punnet cherry tomatoes halved
  • 1 small red onion diced
  • 1 cucumber diced
  • 1 bunch parsley chopped
  • 1 block Greek feta crumbled
For the dressing:
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of pepper

Method
 

  1. Grab a big mixing bowl and toss in the chickpeas, cherry tomatoes, red onion, cucumber, parsley, and feta.
  2. In a jar or small bowl, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, salt, and pepper. Shake it up until it’s silky smooth!
  3. Pour the dressing over your salad and toss gently to coat everything in that zesty goodness.
  4. Pop it in the fridge for an hour or two to let those flavours mingle. (But honestly, it’s delicious straight away too!)
  5. Serve it chilled, and enjoy!
