Ingredients
  

  • 1 cup sweetened condensed milk
  • 200 g butter melted
  • 400 g digestive biscuits
  • Zest of 2 lemons
  • LEMON ICING
  • 2 cups pure icing sugar
  • 20 g butter softened
  • 2 1/2 tbsp lemon juice

Method
 

  1. Blitz the biscuits in a food processor until they look like sand.
  2. Pour in the melted butter, sweetened condensed milk, and lemon zest, then mix again until well combined.
  3. Press the mixture into a lined slice tray and smooth it out evenly. Pop it in the fridge while you make the icing.
  4. For the icing, whisk together the icing sugar, butter, and lemon juice until smooth.
  5. Pour over the chilled biscuit base and spread evenly.
  6. Pop back in the fridge until set. Slice, serve, and enjoy! πŸ‹πŸ’›
