Ingredients
  

  • 4 Chicken breasts
  • 1/2 cup 120g olive oil
  • 3 lemons ๐Ÿ‹
  • 1 tbsp 14g Pepper
  • 1 tbsp 17g salt
  • 1/2 cup 50g fine grated Parmesan cheese ๐Ÿง€
  • 1 Capsicum ๐ŸŒถ๏ธ
  • 2 bunches Broccolini ๐Ÿฅฆ

Method
 

  1. Mix cheese, juice from 2 lemons, salt, and pepper in a bowl.
  2. Stir in 1/2 cup of olive oil.
  3. Make a checkerboard cut on your chicken and lather it with your cheesy peppery mix.
  4. Spread out broccolini and capsicum on a lined baking tray.
  5. Place half the lemon slices on the tray.
  6. Lay your chicken over these slices, and top each breast with another lemon slice.
  7. Drizzle with olive oil and bake at 200ยฐC (390F) for 25-30 minutes, or until golden and juicy.
  8. Serve up and enjoy! Itโ€™s a flavor explosion you wonโ€™t forget. ๐Ÿ˜‹
