Ingredients
  

  • 1 kg diced potatoes
  • 1 kg diced chicken thigh
  • 1 bunch parsley
  • 1 cup Parmesan cheese
  • 1 lemon
  • 1 tbsp crushed garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup olive oil

Method
 

  1. In a food processor, blend parsley, cheese, lemon, garlic, salt, pepper, and oil until it's a zesty green pesto party! 🎉
  2. Place your chicken and potatoes in a baking dish, and pour that vibrant pesto all over them. Get your hands in there and give it a good massage – we want everyone covered in that herby goodness! 🌿
  3. Oven time! Bake at 180C for an hour. Don't forget to give it a little stir halfway through for that extra love. ❤️🥄
