  Who doesn’t love a homemade gift? And what better way to spread some holiday cheer than with a jar of delicious gingerbread granola! 🎁 This super easy recipe is perfect for making in bulk, and the best part? It’s totally giftable and yummy! So let’s get cracking.

Ingredients
  

  • 4 cups whole oats not quick oats
  • 2 cups pecans
  • 2 cups shredded coconut
  • 1/2 cup dried cranberries
  • 1/2 cup diced crystallised ginger
  • 2 teaspoons cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon cardamom
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup

Method
 

  1. Pop all the ingredients into a big bowl and mix it all up with your hands. Don’t be shy—it’s fun!
  2. Once everything is coated and smelling amazing, spread it evenly on an oven tray lined with baking paper.
  3. Bake in a preheated oven at 180°C for 10 minutes, then give it a stir and bake for another 10 minutes until golden brown and crispy. The house is going to smell like Christmas! 🎅🏻
  4. Once it’s cooled, you can pop it into cute jars, ready to gift to your loved ones… or keep it all for yourself!
