This ginger chicken fried rice is a flavour-packed dish that’ll have your taste buds doing a happy dance. Perfect for busy weeknights when you need something fast but fabulous!

Ingredients
  

  • 2 diced chicken breasts
  • 2 tbsp ginger paste
  • 4 sliced green onions
  • 1/2 bunch coriander leaves
  • 4 thinly sliced baby carrots
  • 1 diced large capsicum
  • 1 tsp Chinese 5 spice
  • 1 tsp white pepper
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp Chinese rice wine
  • 4 cups cooked rice cooled or day-old works best

Method
 

  1. In a hot pan, toss in your chicken and ginger paste. Cook for 1 minute to seal that chicken goodness.
  2. Next, add your carrots and capsicum. Cook for a few minutes to soften the carrots slightly.
  3. Sprinkle over the Chinese 5 spice and white pepper for a burst of flavour.
  4. Pour in the oyster sauce, soy sauce, and Chinese rice wine. Give it a quick mix!
  5. Now, add your cooled rice to the pan and stir well to coat every grain in that delicious sauce.
  6. Finally, sprinkle over your coriander leaves and green onions. Stir through and serve hot!
