- Preheat your oven to 180C.
- In a baking dish, pour in your curry paste, tomatoes, water, and evaporated milk. Mix until combined.
- Add your diced chicken thighs, sliced onion, and basmati rice to the baking dish. Stir until everything is nicely coated.
- Cover your dish with wet baking paper and then foil and bake for 40 minutes.
- After 40 minutes, remove the foil and return the dish to the oven for another 20 minutes. Your Curry Chicken Bake is ready when the rice is tender and the chicken is fully cooked.
