Ingredients
  

  • 4 chicken breasts
  • 1 tbsp oregano
  • 1 tbsp crushed garlic
  • 1 tbsp tomato paste
  • 250 g cherry tomatoes
  • 300 g spinach leaves
  • 300 ml cream
  • 1/4 cup Parmesan cheese

Method
 

  1. First, season your chicken breasts with salt and pepper. Heat a splash of olive oil in a hot pan, then add the chicken. Cook until both sides are golden brown and beautiful, then set the chicken aside.
  2. In the same pan, toss in the garlic, tomato paste, oregano, and cherry tomatoes. Give everything a good stir for about a minute.
  3. Pour in the cream and add the Parmesan cheese and spinach. Stir until the spinach wilts and the sauce becomes nice and creamy.
  4. Pop the chicken back into the pan and let it cook on low for another 5 minutes. This will thicken the sauce and finish cooking the chicken to perfection.
  5. Now, it’s time to plate up and enjoy this flavour-packed, creamy chicken goodness!
