Heat a large pan over medium-high heat and pop in your skinless sausages. Break them apart with your meat masher and cook until nicely browned.
Next, add diced onion and crushed garlic. Cook for about 2-3 mins, stirring until garlic smells amazing and onion is softening.
Add tomato paste, fennel seeds (if using), beef stock powder, and your chosen liquid (wine, stock, or water). Stir it up, cooking for about 2 mins to develop that flavour.
Now toss in your spinach leaves, followed by pouring in your cream. Give it a good stir until the spinach has wilted into the creamy sauce. Yum!
Finally, sprinkle in Parmesan cheese, then tip your cooked pasta into the pan.
Stir everything together thoroughly, making sure each pasta piece is coated in the delicious, creamy sauce.
Serve it hot, and watch it disappear fast!
