Ingredients
  

  • 4 chicken thighs 🍗
  • 1/2 cup plain flour
  • A pinch of salt and pepper 🧂
  • A splash of olive oil 🫒
  • 1 jar of basil pesto around 190g 🌿
  • 300 ml cream 🥛
  • 8 baby potatoes cooked and halved 🥔
  • 300 g fresh spinach leaves 🌱

Method
 

  1. Season your chicken thighs with salt and pepper.
  2. Gently roll them in flour, shaking off any excess.
  3. Get them all brown and crispy on both sides in a hot pan with a touch of olive oil.
  4. Pour in that aromatic basil pesto and creamy cream, giving it a good mix.
  5. Now, toss in your baby potatoes and fresh spinach. Cover that pan and let it simmer on a low heat for about 10 minutes. 🕒
  6. Serve hot and enjoy a plate of pure comfort! 💛
