Ingredients
  

  • 500 g diced chicken
  • 2 capsicums diced
  • 1 onion diced
  • 1 bunch broccolini chopped
  • 500 g cooked baby potatoes halved
  • 1 jar Kalamata olives drained
  • 1 tbsp garlic minced
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp chicken stock powder
  • 1 tin tomatoes
  • 300 ml cream
  • Salt and pepper to taste

Method
 

  1. In a large pan, brown your chicken with garlic, chicken stock, thyme, and oregano.🍳
  2. Add diced onion and capsicum to the pan. Cover with a lid and let it cook for 5 minutes, allowing the flavors to meld. 🌶️🧅
  3. Stir in the remaining ingredients: broccolini, baby potatoes, Kalamata olives, tin tomatoes, and cream. Season with salt and pepper. 🥦🥔
  4. Cover with the lid again and let it simmer for 10 minutes, allowing all the flavors to blend together beautifully. 🍅🍲
