Hey everyone! 🌟 Day 9 of my veggie journey and I’ve whipped up something super colourful and bursting with flavour—it's my Cowboy Caviar Salad or Dip! 🥗 Perfect for any meal or snack time. Trust me, it's a total crowd-pleaser and an absolute breeze to make. 😍

Ingredients
  

Dressing
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 1/4 cup maple syrup
  • Pinch of salt
  • Pinch pepper
  • 1 tsp smoked paprika
  • 1 tsp onion powder
Salad
  • 1 diced onion 🧅
  • 2 diced jalapeño chilies optional for that spicy kick! 🔥
  • 1 diced capsicum
  • 2 diced Lebanese cucumbers 🥒
  • 1 can of corn drained 🌽
  • 1 can of black beans drained
  • A bunch of fresh coriander chopped
  • 1.5 cups of cooked and cooled brown rice 🍚

Method
 

  1. Kick things off by whisking together all the dressing ingredients right in your salad bowl.
  2. Toss in all those vibrant veggies and rice and give everything a good mix. 🥗
  3. And just like that, you're ready to dig in! Enjoy this fab creation on its own, as a filling for tacos and burritos, or dip into it with some cheesy Doritos for a fun snack! 🌮
