Scoop out 1/3 of the cream mix and set it aside for later.
Fold the diced crystallised ginger and choc chips into the remaining 2/3 of the cream mixture.
Spread a bit of the ginger-choc cream on the base of your serving tray—this keeps the log steady. Then, sandwich some cream between two ginger biscuits and stack them upright on the tray. Keep adding cream and biscuits until you’ve got a delicious log.
Take the reserved cream mixture and spread it over the log until the biscuits are fully covered (think festive frosting vibes!). Wrap it in cling wrap and pop it in the fridge overnight—or up to three days if you’re prepping ahead.
When it’s time to serve, decorate your log with strawberries, extra biscuits, mint leaves, and a sprinkle of icing sugar for that magical Christmas touch.
