Ingredients
  

  • 1 diced red onion
  • 2 sliced chorizo sausages
  • 1 tbsp crushed garlic
  • 1 cup Arborio rice
  • 1 tsp turmeric
  • 1 cup white wine or swap for stock
  • 2 cups beef stock
  • 1 jar Always Fresh Sicilian Green Olives
  • 1 jar Always Fresh Roasted Red Pepper Strips
  • 1/2 cup diced parsley
  • 1 lemon

Method
 

  1. Heat olive oil in a pan, toss in onion and chorizo. Cook until caramelized. 😋
  2. Mix in garlic, turmeric, and rice. Stir for a minute.
  3. Pour in wine, stock, parsley, olives, and peppers. Give it a stir, cover with a lid.
  4. After 5 minutes, uncover, reduce heat to medium. Cook until liquid’s gone and rice is soft. Tip: If rice isn’t soft and liquid’s gone, add 1/2 cup water.
  5. Serve it up with lemon wedges. 🍋 Enjoy!
