🍰 Hey everyone! Day 3 of our quest to eat more vegetables! Who's up for a super moist and secretly vegetable filled treat? 🌿 Today, I'm sharing my Easy Chocolate Zucchini Cake recipe that will leave you amazed at how something so simple can taste so divine! 🍫🥒

Ingredients
  

  • 1.5 cups brown sugar
  • 1/2 cup oil
  • 2 eggs
  • 2 cups self-raising flour
  • - 1/4 cup cocoa
  • 2 cups grated zucchini
  • 250 g chocolate chips
  • Splash of vanilla
  • Pinch of salt

Method
 

  1. Grab all your ingredients and toss them into a large bowl. Mix everything together until well combined - make sure there's no white flour peeking through!
  2. Line a 20x20cm square baking dish with some parchment paper and pour your cake mixture in.
  3. Bake in a preheated oven for 35-45 minutes. Check if it's done by gently pressing the middle of the cake; if it springs back, it's ready! If it stays sunken, give it a bit more time.
  4. Once baked, you could go fancy with icing, but I love dusting it lightly with icing sugar. It’s simply perfect! 😋
  5. This cake is a fantastic way to sneak some veggies into your dessert. It’s incredibly moist, rich, and chocolatey that you wouldn’t even guess there's zucchini in there!
