This Chilli Con Carne is a bold, comforting dinner made with beef mince, black beans, and warming spices—all ready in under 30 minutes. Serve it loaded with sour cream, guacamole, fresh corn, and crunchy corn chips for the ultimate crowd-pleaser. Perfect for meal prep, easy weeknights, or freezer-friendly batch cooking.

Ingredients
  

  • 2 tbsp olive oil
  • 500 g beef mince
  • 1 small brown onion
  • 1 x 30 gm packet chilli con carne seasoning
  • 1 x 400 g tin black beans
To serve
  • 1 family size packet of corn chips
  • 300 mls sour cream
  • Guacamole – store bought or home made
  • 1 cob of corn kernels
  • Fresh coriander

Method
 

  1. Dice the onion and rinse the beans until the water runs clear, strain.
  2. Heat oil in pan over medium heat. Add onion and cook until soft, about 5 mins.
  3. Increase heat slightly, add beef mince, break it up with a wooden spoon.
  4. Add in the seasoning and cook until mince is browned.
  5. Stir in the beans, simmer for five minutes.
  6. To serve, divide into four bowls and add sour cream, guacamole, and corn on top. Sprinkle with coriander and add a handful of corn chips to each bowl.

Tips and Tricks
  • Use a packet of taco seasoning if you dislike chilli, or if you have a packet of taco seasoning handy, add your own desired amount of chilli powder with it.
  • Make ahead: Even better the next day — flavours deepen overnight.
  • Freezer friendly: Cool completely, portion and freeze for up to 3 months.
  • Halve or skip chilli and offer hot sauce at the table.

  • 1 tbsp ground cumin
  • 1 tsp smoked paprika (or sweet paprika if preferred)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1-2 tsp chilli powder or cayenne (adjust for spice)
  • ½ tsp salt
