Ingredients

  • 1 kg chicken thighs
  • juice of 2 lemons
  • 1/4 cup yoghurt
  • 1 tbsp garam masala
  • 1 tbsp smoked paprika
  • 1 tbsp crushed garlic
  • 2 tbsp salt

Method

  1. Whisk together the lemon juice, yoghurt, garam masala, smoked paprika, garlic, and salt to create a deliciously spiced marinade. Then, give the chicken thighs a nice massage in all that flavour. Trust me, this step is essential for max taste!
  2. Next, grab a loaf tin, line it with baking paper, and start layering those chicken thighs right on top of each other. Pop it in a preheated oven at 180°C for 40 minutes. The smell will make your kitchen feel like a Middle Eastern street food market!
  3. Once your chicken is golden and juicy, let it rest for 15 minutes to allow all those delicious juices to soak back in. Then, carve it up and enjoy!
