This is what happens when pasta night and taco night join forces! My Fajita Chicken Pasta Bake is smoky, creamy, cheesy and totally irresistible. It’s packed with bold Mexican-inspired flavour, and the whole family will be racing to the table. Plus, it’s all baked in one big dish of comfort. Let’s get into it!

Ingredients
  

  • 4 diced chicken thighs
  • 2 diced capsicums
  • 2 sliced onions
1 sachet of fajita seasoning or use the following spices:
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp cumin
  • 2 tbsp oregano
  • 2 tbsp chicken stock powder
  • 2 tbsp smoked paprika
  • 1 x 400g can crushed tomatoes
  • 300 g sour cream
  • 500 g dried pasta cooked
  • 2 cups pizza cheese

Method
 

  1. Heat a splash of oil in a pan and cook the chicken for 2 minutes to seal.
  2. Add the onion and capsicum and cook for another 2 minutes until starting to soften.
  3. Add your spices or fajita mix and stir until everything is coated in flavour.
  4. Pour in the tomatoes and simmer for 5 minutes.
  5. Stir through the sour cream, then add the cooked and cooled pasta.
  6. Mix it all up, pour into a baking dish and top with pizza cheese.
  7. Bake at 200°C for 15 minutes until golden, bubbly and completely irresistible.
