Ingredients

  • 1 kg beef chuck casserole
  • 3 diced carrots
  • 3 diced onions
  • 3 diced celery sticks
  • 2 tins 800g diced tomatoes
  • 1 litre beef stock
  • 3 tbsp tomato paste
  • 1 jar 750ml tomato passata
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary

Method

  1. In a hot pan with some olive oil, brown your beef heavily on both sides.
  2. Remove the beef from the pan and pour in the beef stock to deglaze, making sure to scrape up all those tasty brown bits from the bottom.
  3. In your slow cooker or pot, add tomato paste, tomatoes, passata, herbs, and stock. Give it a little whisk.
  4. Add your beef and vegetables.
  5. If using a slow cooker, cook on low for 8 hours or high for 4 hours. Alternatively, you can pop it in your oven at 160°C for 2.5 hours.
  6. Voilà! You've got a delicious beef ragu sauce ready to enjoy or freeze for later. Perfect for pasta, rice, or even on a baked potato. Enjoy the comforting flavours and the ease of having a ready-made meal.
