Ingredients
  

  • 500 g diced Chicken thigh πŸ—
  • 1 sliced Onion πŸ§…
  • 1 sliced Capsicum πŸ«‘
  • 200 g Cherry Tomato πŸ…
  • 2 cups grated Mozzarella πŸ§€
  • 1 cup fresh Basil leaves 🌿
  • 200 g sliced Pepperoni πŸ•
  • **Marinade:**
  • 1/2 cup bbq sauce
  • 2 tbsp lime juice πŸ‹
  • 1 tbsp smoked paprika 🌢️
  • 1 tbsp onion powder
  • 1 tbsp garlic powder πŸ§„

Method
 

  1. Whisk together the marinade ingredients and toss in your diced chicken to coat.
  2. Layer your baking dish with onion, capsicum, tomatoes, and pepperoni.
  3. Add the marinated chicken and give it a good stir.
  4. Bake at 200C for 30 mins.
  5. Garnish with fresh basil and smother with mozzarella.
  6. Pop back in the oven for 10 mins or until the cheese turns a beautiful golden hue. And voila! Dinner perfection. 😍 Oh, and pro-tip: Pair it with some crunchy garlic bread. Because why not? πŸ₯–
