Ingredients
  

Cake
  • 2 tbsp instant coffee
  • 200 g soft butter
  • 1 cup brown sugar
  • 3 eggs
  • 1/2 cup Baileys
  • 2 cups self-raising flour
Icing
  • 50 g soft butter
  • 2 cups icing sugar
  • 1/4 cup Baileys

Method
 

  1. Mix the soft butter and brown sugar in a bowl and whisk until creamy.
  2. Add the eggs one at a time, whisking well after each.
  3. Stir in the coffee, Baileys, and self-raising flour. Mix until smooth and lump-free.
  4. Pour the batter into a greased loaf tin.
  5. Bake at 180°C for 40 minutes or until a skewer comes out clean. Let it cool completely.
For the icing
  1. Combine the soft butter, icing sugar, and Baileys. Mix until silky smooth.
  2. Spread generously over your cooled cake.
