Ingredients

  • 150 g butter softened
  • 1/2 cup icing sugar sifted (plus extra for dusting)
  • 4 tbsp plain flour
  • 2 cups almond meal
  • 1 cup flaked almonds
  • 6 croissants

Method

  1. Mix butter, icing sugar, flour, and almond meal in a bowl until smooth.
  2. Slice each croissant in half.
  3. Spread the almond mix generously onto the bottom half of each croissant.
  4. Pop the top half back on and spread more almond mix on top.
  5. Sprinkle flaked almonds over the top so they stick to the almond mix.
  6. Place your croissants on a baking tray and bake at 180°C for 10 minutes, or until golden and smelling amazing.
  7. Once cooled slightly, dust with icing sugar for that bakery-perfect finish.
