Mix Greek yoghurt, garlic, lemon juice, stock, oregano, thyme, and cumin in a bowl.
Add your chicken to the mix and let it soak up all that delicious marinade while you prep the veg.
Cut your capsicum, red onion, and zucchini into chunky pieces—perfect for two bites! Toss them with olive oil, salt, and pepper in the air fryer basket.
Place the chicken on top of the veggies.
Set your air fryer to 200°C and cook for 15 minutes.
When done, don't forget to drizzle that flavour-packed juice from the bottom of the air fryer over your chicken and veggies. Yum!
