- Start by heating some olive oil in a hot pan.
- Add your diced chicken and sliced mushrooms to the pan. Season with a good pinch of salt and pepper. Cook until the mushrooms are browned and all the liquid has evaporated. ๐
- Stir in your jar of pesto, followed by the cooked pasta and 1 cup of pasta water. If you prefer a creamy texture, you can swap the pasta water for 1 cup of cream.
- Mix until the pasta is completely coated in the rich, green goodness of pesto. Serve immediately and enjoy!
