- Mix the flour, buttermilk, and egg in a bowl until smooth. Add blueberries if desired.
- Let the batter rest for 15 minutes.
- Heat a greased pan over medium heat. Pour a scoop of batter into the pan.
- Cook until bubbles form on top and stay open. Flip the pancake and cook until the bottom is golden brown.
- Top with fruit of your choice and always drizzle with maple syrup. Enjoy!
