Ingredients
  

  • 1 cup self-raising flour
  • 1 cup buttermilk
  • 1 egg
  • 1 punnet of blueberries

Method
 

  1. Mix the flour, buttermilk, and egg in a bowl until smooth. Add blueberries if desired.
  2. Let the batter rest for 15 minutes.
  3. Heat a greased pan over medium heat. Pour a scoop of batter into the pan.
  4. Cook until bubbles form on top and stay open. Flip the pancake and cook until the bottom is golden brown.
  5. Top with fruit of your choice and always drizzle with maple syrup. Enjoy!
