Mexican lasagna
Ingredients
- 500 g beef mince
- 2 onions diced
- 2 capsicums diced
- 2 cups frozen or canned corn
- 2 x 400g cans kidney beans
- 2 x 400g cans crushed tomatoes
- 1 packet taco seasoning or use the spices below
- 2 tbsp smoked paprika
- 1 tbsp oregano
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Chilli powder to taste
- 10 small tortillas
- 1 x 300g jar of salsa
- 500 g Mexican grated cheese

Method
- Heat a pan and brown the mince.
- Add the onion, capsicum, and spices. Cook for a few minutes until the onion softens.
- Stir in the corn, beans, and tomatoes.
- Once it starts to bubble, cover and cook on low for 15 minutes. Remove the lid and cook for another 5 minutes to thicken.
- In a lasagna dish, spread a thin layer of the beef mixture, top with two tortillas, then more beef and some cheese. Repeat for three layers, finishing with tortillas.
- Pour the salsa over the top and spread evenly.
- Sprinkle on the remaining cheese.
- Bake at 180°C for 30 minutes until golden. Let it rest for 10 minutes before serving. I love adding a big dollop of sour cream on top! Enjoy! 🤤
