  This one’s a cheesy, crispy, saucy weeknight winner! My Pesto Chicken Bacon Loaded Potatoes are everything you want in one bite – golden air-fried potatoes, juicy chicken, crispy bacon, melty cheese and a hit of herby pesto goodness. Ingredients
  

  • 4 diced chicken thighs
  • 200 g diced bacon
  • 1 punnet cherry tomatoes
  • 1 x 190g jar basil pesto
  • 8 medium potatoes cubed
  • 2 cups pizza cheese

Method
 

  1. Chop your potatoes into 2cm cubes, drizzle with olive oil and a sprinkle of salt, then air fry at 200°C for 20 minutes, giving them a shake halfway through.
  2. While the potatoes cook, heat a pan and add the chicken and bacon. Cook for about 10 minutes until golden.
  3. Toss in the cherry tomatoes and pesto and stir it all together until the chicken is coated and the tomatoes are warmed through.
  4. Turn off the heat and pour the crispy potatoes over the top.
  5. Sprinkle on the cheese, then pop the whole pan into the oven at 220°C for about 15 minutes or until everything is golden and bubbly.
