Ingredients
  

  • 500 g bow pasta
  • 1 cup Basil Pesto homemade recipe below!
  • 1 jar roasted capsicum slices
  • 1 jar sun-dried tomatoes
  • 1 head of broccoli
  • 220 g baby bocconcini
  • Pesto Recipe
  • 1 bunch fresh basil leaves
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup extra-virgin olive oil
  • 1/2 cup pine nuts
  • 1 garlic clove
  • Salt and freshly ground black pepper to taste
  • A squeeze of lemon juice optional, for freshness

Method
 

  1. Start by toasting pine nuts in a dry pan over low heat until lightly golden.
  2. In your food processor, combine basil, nuts, garlic, cheese, and oil. Pulse to create a beautiful chunky pesto sauce.
  3. Add a pinch of salt, pepper, and a lemon squeeze for zing.
  4. Stir the pesto through your cooked pasta.
  5. Add drained sun-dried tomatoes, baby bocconcini, blanched broccoli and capsicum. Toss together for a mouthwatering holiday feast!
